Arca Tierra is a Xochimilco-based agroecologic initiative and a network of farmers dedicated to regenerative agriculture in Mexico. It promotes sustainable farming, enriching soil, conserving water and supporting biodiversity. Arca Tierra works with the chinampas of Xochimilco, ancient artificial islands built at least 3,000 years ago, recognized as a UNESCO World Heritage site and considered one of the most productive agricultural systems in the world. Arca Tierra in collaboration with Silo London, opened Baldío, Mexico’s first zero-waste restaurant. It provides Baldío with fresh and locally sourced produce and also supplies some of the city’s best restaurants including Pujol, Rosetta, Máximo Bistrot, Contramar, Malix, Meroma, Masala y Maíz and Tetetlán.
