Workers Aremy Dalila Perez Cruz, 31 (R), and Marisol Estrella Alvarado Bautista, 19 (L), load the yellow corn grain into the grinding machine, destined for use in Sierra Norte Whiskey, at the Sierra Norte distillery in Oaxaca, Mexico on Wednesday, December 20, 2023. They grind the corn into a corn meal for making the corn mash. The Sierra Norte Whiskies are made from 85% ancestral non GMO black, white, yellow, purple and red heirloom corn farmed by traditional farmers in Oaxaca, Mexico and 15% malted barley, then double distilled in copper pot stills and aged approximately 2 to 3 years in French Oak single barrel casks.
